Are potassium meta and sodium meta completely interchangable in wine making and sanitizing?

For sanitizing sodium metabisulfite is actually a little better than the potassium form, as it has a little bit higher active SO2 content. Some people avoid using sodium metabisulfite in the wind just to minimize the sodium content of the wine. I use relatively littleof either, so I just buy the potassium metabisulfite one pound at a time. Edited by: PeterZ
 
You will get more sulfite's from Sodium but yes, they are interchangeable. I use Sodium because it is cheaper and a better sanitizer. I did quit using it as a sanitizer and use Star San now as you can't use the sulfite's in beer making so I went to an item that is interchangeable between both,
