I have started a New Zealand Marlot and it is supposed to set for 5-7 days the SG should be 1.010 or less when it is time for the firstracking. It has been 6 days and the SG if 1.006 but there is still bubbles in the airlock and if you take the lid off it is fizzing a little inside. Do I rack or do I wait?

Rack it Sadie

You want some fermentation to still be happening when you transfer to secondary. This protects your wine from oxygen by its own action of releasing CO2

Thanks gaudet, I will go rack this one and then I'm going to start a Spanish Rioja. :)
