So my wine has been topped up and I am almost ready to bottle.

One small problem. I can't remember if I stabilized or not. I think I did so I made up a syurp with a cup of sugar and have not seen any signs of reactivated fermentation.

Man, I need to take better notes. I have gotten so lazy that the last couple of fruit wines I made didn't even get put in the recipe book:slp:d

Do you take detailed notes or you "gasp" lazy like me:d

Like I said in the other post, I put a strip of wide masking tape on the carboy when I go to secondary. I usually do good notes for the primary, the secondary notes don't always make it back to my recipe book. i try and get what I do for a flavor pac and what I sweeten it back to in the book. The normal everyday stuff like racking, I don't bother to write in there. Arne.

I think I have heard of some people adding sorbate to make sure it is stabilized. Probably not too late to add. Note... if the wine had a malolactic ferm do not use sorbate or it will ruin the wine...
