Any wine will be better with more age on it. Some of these kits dont need much at all though like the Mist style kits. They are good right on schedule but even they will improve with another months age. Most white wines will improve with like 2-3 months for smaller kits and 6 months for the big kits(15 liter and bigger) but even the smallest red kit will need about 4 months.

thanks for the heads up, looks like i will have to see about getting a few reds started so that i can age them through the cold MN winter
