Freezing fruit is one of the best ways for storage.
Not only can you keep fruit for a long time in the freezer
but when thawed the fruit will release the juices easily.

However freezing may cause some minor changes in the fruit.
- Vitamin C content decreases over time
- look at my apple story and see how the color
of the frozen apples has changed. So freezing may
not prevent some oxidation.
But nothing to worry about. Freezing does not alter
the fruit too much so not a lot of quality is lost.
I freeze all my fruit (when I have some space left over in the freezer).
At this moment my freezer is top-full with 17 kilo rhubarb, about 25 kilo elderberries, 10 kilo blackberries, 3 kilo rose hips and about 1,5 kilo dandelion petals.
All are waiting till I find the time to make wine with them.
