Freezing figs?

I am going to make some fig wine but I need to pick a pound or two at a time depending on ripeness. Can I freeze them then thaw to make wine?

I had fig wine once and didn't like it at all. It had a soapy taste to it, I would assume it is not suppose to. I do not know that much about figs but I would freese them, actually I freeze anything first before I use it for wine.
