We just finished a bottle of 2008 Pear. It was wonderful! Only two bottles left!

I've been remodeling, so no fermentation for over a year. Tonight I pitch yeast on the first batch of 2011.

220 pounds of mashed pears, 20 pounds of bananas, and 12 gallons of water in two 30 gallon primarys. It took 27 pounds of sugar to get the SG to 1.85.

Shooting for 20-22 gallons in secondary.

2013 here we come!
 
Wow, that is a pretty big batch. Are you going to experiement with any of the wine, like maybe blend it or add spices to some.
 
I'm still in the throws of remodeling, and the freezer is full of other fruit :) the pears had to be processed and fermented before they ended up in the compost pile. No idea what the final product will look like.
