Started an En Primeur Carmenere on Sunday. Wouldn't start fermenting, so I used grabbed another yeast packet and rehydrated the yeast per the instructions on the back of the yeast packet (which was different than the instructions in the kit). The next morning I had a wine volcano, and I'm fermenting in an appropriate bucket, not a carboy.

1. Will the addition of the second yeast packet have an adverse affect on the taste of the wine? If so, can I combat this?

2. Will the fact that I had a "wine volcano" affect the leftover wine?
 
What makes you think fermentation did not start? SG readings or a lack of airlock activity?

Also, if you are using a brew bucket, for the first few days do not seal the lid and you won't have volcano issues. But dont worry, the volcano should not have a negative effect on your wine. Other than some of the precious liquid being wasted on the floor. :-(
