We are making our first wine. It is a Cellar Craft Syrah. Because of some work travel, we are going to be late clearing the wine (doing it about six days later). Everything has been textbook perfect up till now.

What are risks of waiting a few extra days before clearing?

I don't see any risk. You may see some sediment already having fallen out by itself and this will get stirred back in when you add and stir your clearing agent(s). If you we're willing to wait long enough your wine would likely clear without adding clearing agents. I think with kits the agents are part of the process so that you get to bottle @ week 4,5,6 or 8, depending on the kit level. You now have your equipment freed up so might as well buy another kit!

The times given are just guidelines. Waiting will not hurt your wine.
