I think im gonna try this one out again since my last batch messed up. If this one turns out good i might do a 5 gallon next. I started off with
1qt of tart cherry concentrate
1.5 lbs of sweet cherries juiced
2 oz elderberries
15 g american oak shredded
1/2 tbs yeast nutrients
water to one gal

dropped the campden tab in there 2 days ago and pectin from 9 to 9 yesterday.
PH came out to 3.21
TA to .75

afterwards i dropped in half a tsp of calcium carbonate to lower acidity and threw in the hydrated yeast (1118). Can definitely hear bubbles :).
Im still a newb so any advise is always welcome. Thanks!
 
That sounds like an awful lot of oak for a 1 gallon batch to me. Id go with like no more then 4 ozs. and taste very often!!!
 
Does the oak become more prominent as it ages? I did a strawberry wine batch with the same amount of oak and it did not come out very much.
Also with the beginning oak in there do you think i shouldn't oak age with Hungarian?
 
Really Tart! SG is around 1.020, think i will add another 2 lbs of sweet cherries to offset the tartness. Any other suggestions?
