Have a Cellar Craft Premium Shiraz kit degassing right now after racking after fermentation. Does anyone know the recommended starting SG for this kit? The instructions don't seem to say unlike most of the other kits we have done (this is kit #47 for us). We are fermenting everything to dry in the primary in a water bath kept at 22 degrees Celsius (70 degrees f), as well as degassing in the bath as its cold during the winter here in Canada. The starting SG was 1.082, final 0.998, which is a touch higher than the kit recommends (at or below 0.996) but starting sg was lower than other kits we have done of this type with a final alcohol reading of about 11.4%. Final SG was .998 for 4 days before we racked it for degassing, tested daily. Does anyone have any starting SG #'s they can share as I am wondering if we were in line with this kit or it really needed the rack to secondary which we stopped doing with all of our kits late last year and have had no issues with SG's around the 0.992-0.996 region. Kit was started and tested with warmed (23 degrees Celsius) water as we do with all of our kits.
