I have six gallons of MM lambrusco that is ready to bottle. I want bulk age 3 gallons of it and bottle the rest. Do I have toadd any metabisulphite to either the bottled wine or the bulk aged wine? I think I am supposed to, but I was'nt sure. I was thinkinf about adding the metabi to the full six gallons, and then wait a week before bottleing half. I thought this sounded like the best method. What are your thoughts????
 
How much K-Meta have you added to the batch so far? If you haven't added any extra at any point yet besides what is supplied, it would probably be safe to do so. 1/4 tsp in the 6 gallons would help protect it while bulk aging and help extend the time in the bottle.
 
I have not added anything other then what came with the kit. that is about what I expected though. It just made sense that I would want to add some. thanks!!!
