Are there any recommendations on kit tweaks for the WE Selection Barolo 16 liter kit? The kit has no skins. I have purchased some wine tannins in anticipation of using it future kits, but I do not now if that would hurt this kit. I have not made this kit before and have never had Barolo wine ever. Raisins, bananas? Thanks in advance for your advice!
 
Bill, I have a 15 gallon demijohn of what I am calling my "Barolo Speciale." I added a 96 oz. can of blackberries in primary for a slightly different background flavor. I have had it in the demijohn for over a year now and I am just getting ready to bottle.
 
I had to laugh when I read Rocky's post because I too added blackberries (mine were frozen) and aged it a year.Sad to say,it's all gone now. Aged it a year and then...
