We just started our first batch - a Chablis. All is going well, but then we checked the calendar. The 14 day period for the wine to clarify before bottling ends right in the middle of our vacation week!

The question: Should we bottle 3 days early, or wait until we return (4 days late), or are we just sunk without a trace?

Not to worry as this step is very flexable.....4 days, 4 weeks, or even 4 months is fine!
 
The extra time will help ensure that the wine has cleared completely.


Be sure when you are at the degassing stage that you do so adequately. If using a spoon be prepared for an arm transplant to get it done completely. The purchase of a simple drill mounted stirring device will help prevent the overworked arm syndrome and give you a better chance at a gas free wine.

Welcome Skymir, time is on your side at this point. the only time that you really need to follow a time schedule is when racking from Primary bucket to carboy as this will give you a blanket of CO2 from the wine fermenting to protect your wine from O2. Glad to have you aboard and feel free to ask away.
