This a wine that I doubt if I can duplicate and that is too bad since it is a pretty good wine. July 2008 I bottled a rhubarb wine that was made with just a hint of allspice. After a year, I thought it was pretty good but it appeared I was the only one who thought so! SWMBO didn't care for it so that was the start of it's demise! July of 2009 I made Apple Raspberry wine. Again after a year, I didn't think it was very good. Had an overpowering raspberry taste. So here is what I did! I emptied 15 bottles or rhubarb along with 15 bottles of apple raspberry into 6 gallon carboy. Added 1/4 tsp sorbate, back sweetened just a touch (1.010) and bottled again. Now everyone agrees it's a pretty good tasting wine. Amazing what you can do with this stuff!!!!!!!
