I made this kit about a month ago. It was my first and I had no idea what wine tastes like right after fermentation.
I bumped the alcohol up some. Right out of the degassing, it was so tart I thought I had somehow ruined the kit. It was just very, very green. As it turned out, I didn't ruin it, because a few days ago I tried it again. What a difference even a few weeks can make!

My advice to you - don't rush it. Being my first kit, I think I was in too big a hurry to get the wine off the raisins. If the fermentation goes quickly, let it set a few extra days on the raisins, sealed and under the airlock. Take the maximum days the instructions say for fermentation.
