What is the best way to bring alcohol content up? Add sugar in the beginning or top off with something stronger in the carboy?
 
Feed sugar syrup in the secondary vessel every time the SG falls to 1.010. When the yeast has hit it's upper limits andsuccombs to alcohol toxicity, fermentation will stop and further additions well only sweeten the wine. Remember, wine should be balanced. Acid, tannin, sugar, and alcohol should all be balanced to one another to have a good wine.
