There was no yeast nutrient in my kit. I assume none was required even though the instructions seem to indicate it was not an optional ingredient.

Jack, these kits come with new instructions, but some were added to kits that didn't have the nutrient in them. It will still be fine, but if you have some you may add it at the prescribed dosing level. It helps the wine ferment a bit cleaner so it reduces the chances of any off smells.
