They are talking bottle aging as they state to bottle this wine at the last stage. Dont go by what they state unless you have poor cellaring conditions.
What I mean is that they are talking about bottle aging. If you have good temps with little sunlight or florescent light then you can go way past what the directions say. Some of these wines dont even get good until these times.
