Put my wine in the carboy at 1.000 it`s bubbling (That`s good right??) After the airlock stops bubbling Then what do I do?? Thanks for any advice
 
Hi, don't judge your wine about whether it's bubbling or not. What matters is what the specific gravity is. That's what you use to determine if it's time to move to the next step. Have fun.
 
I guess thats my question ,When is it time and what is the "Next Step" ? thanks
 
After the wine has fermented to dry, rack it to another cable and add k-meta. At this point rack every three months and sulfite. once wine is clear you can rack and bottle or rack and backsweeten, if you backsweeten let it sit in the carboy for a couple more weeks then bottle.
 
After going to "secondary" @ around SG 1.020-1.000 I'll wait about 7 days to begin checking SG to see if wine has gone to dry - usually finding SG around 0.096-0.092. The next phase for me includes racking as Julie said to a another clean carboy, stabilizing with sulfite and k-meta stired in, degassing by stirring, back sweetening, adding clearing agents and stirring and finally vacuum degassing over the course of a few days. I'll rack again off the heavy sediment for several months of bulk aging. With kits I pretty much follow the directions until instructions say to bottle at which time I start a bulk age. Good luck!
 
THANKS!! You have a very impressive list !! here`s mine 1 gallon Muscadine 5 gallons of blackberry .... um that`s it lol but I did start learning three years ago when I planted my own little 7 vine vineyard that is doing quite well :db
 
Thanks bill for the info , I don`t have a lot of hands on experience just now working on my second try , but have been reading books etc and watching videos on You Tube . I started 3 years ago when I planted my own little 7 vine vineyard , some of the process is starting to sink in . also I have a good friend who is a beer brewer that helps me a lot and nice people like yourself
