In following the MM kit directions there is no mention of adding extra K-Meta at bottling. I am wondering if I should or should not add anyway??? I have my Chianti ready to transfer to bulk aging and would like to add it now if it is appropriate. Thanks
 
Definetly add the extra k-meta. I dont know when they changed the
instructions but the new instructions on their website say to add.This
is right off their website. Although I dont see it under the Vino Del
Vida kit.





3. If ageing past 6 months we suggest adding an extra 1/4 teaspoon of sulphite to the Primary Fermenter to

prevent premature oxidation of the wine.



Adding it at anytime before bottling will work. I think they just do it
this way to get it mixed in really well so no one bottles it with
k-meta floating around that bwas not disolved properly.
