Welches White Niagara 100% juice

18 cans concentrate
pectic enzyme (per dosage on package)
acid blend 4 TBS
yeast nutrient (per dosage on package)
yeast energizer (per dosage on package)
water to 23 ltr.
yeast 1 pkg (I used lavin 1116)
6 days rack to secondary
15 days (total) stablize and fine
campden 6 tabs
sorbate 1 1/2 tsp
superklear 1 pkg.
30 days filter and bottle
campden 6 tabs

31 bottles 11% ABV

Good taste at bottling time.


This is AAASTINKIES receipe, do I really need 12 campden tabs? Also, as I have never done this before and I'll need some supplies socan someone give me an idea on the size of the pectic, nutrient, andenergizer needed? I don't want to buy 2 oz to find out I need 8 or buy a pound to find out I need 2 oz.
 
Thanks Masta, but you're going to have to spell this out for me. I should not add ANY Campden tabs at all?
 
I have not made it as Frank and others have but I would be careful not to add too much more sulfite to this wine and without testing you really don't know what the level is.
That being said if Frank has made this and added two doses of campden tabs and the finished wine was ok then maybe the level is acceptable.
 
Thanks again, what about the other ingrediants? How much of them should I buy to get started?

I was under the assumption that the ready to drink white grape is the one that is loaded with sulfites. I believe that the frozen concentrate has little or none in it. Correct me if I'm wrong please.

I stopped by the store tonite and the white frozen juice says "sulfites" on the ingrediant list. No idea how much tho.

I sent an e-mail to Welches asking this same question but have not received any response as of yet.


My main point bringing this up was to help remind folks that the white grape juice does contain sulfites as moreinformation makes us all better winemakers!
