I am not sweetening this wine - this is a very good dry wine.
I also am not planning on doing an MLF - as I prefer the acidic taste to a white wine.
I did add a touch of oak to a 1 gallon jug for aging - will blend that with the 6.5 gallons of unoaked - for a subtle hint of oak.
It has been 9 months now - plan on bottling in 3 months - and serving around 15 - 18 months.
This wine is a full bodied dry wine. It has tropical fruit aromas and some minerality notes to it.
The green taste has almost completely dissipated - this should be ready to serve in about 6 months or so as well..
