Yeast question...

I did 4 batches so far, one of them from a kit and I add the yeast at the beginning, on the first day and everything came fine as planned, now with the nexts 2 batches the recipes say to add yeast on the second day (they are jalapeño and pinot noir from concentrate), and I also noticed by reading previous posts that some of you add the yeast on the second day, to be honest, I didn't notice any difference, are there advantages to do it on the second day? or is this done with certain wines only?

For recipes that require campden or K-meta to be added at the start to stop any wild yeasts, the yeast is added the next day. Kits do not require this step, and neither do recipes using pasteurized (or similar) juices.

Good, thank you for your information, that saves an extra step, and we wait one less day to drink the wine...:D
