I have made this kit twice now and both times it came out great. I have a couple of questins for mythird go around.
My local guy has brought in some white grape concentrate, around 23 brix. I tasted one of the small red kits he did with the red concentrate and wow! So I thought I would try the white with the pinot. He is telling me that you add the juice and concentrate then add water until you get to the target SG/alc by vol. you want.
My first questions is could I split this 10L kit and do 1/2 with the concentrate and the other to the directions? And second if I did it as one batch could I use a 30 gallon fermentor since it would probably start out at about 7-7 1/2 gallons.
Thoughts???
