I made red clover wine with my grandfather many, many, many years ago. I thing it was very good but I was also young and would drink anything. I have seen recipes for Holiday wines with cloves added, never tried it. Don't like cloves or spiced drinks. Well, maybe Sailor Jerry's with a little orange juice....

have tried clover, really like the flower as picked, ,, when I processed it similar to dandelion flowers I would call it green/ grassy so I never finished the must

cloves (the spice) have limiting use in foods, nice at 0.1% and less. ,,, nice as 10% of a spice mix designed to be one teaspoon in a 9 inch pumpkin pie

Made Clove wine around 1976, wasn't bad; but I haven't made it since. I vaguely recall using about 10 cloves for 1 gallon. It is certainly worth experimenting with lesser amounts in a dull tasting red.
