Just bought my first kit and all my supplies. The instructions say to ferment between 72-75 degrees but I'm hearing whites need to be fermented at lower temps. Should I follow the instructions or go with a lower temp? The kit is the Selection series German Muller-Thurgau. Thanks for any help. Nick
 
Always recommend that newcomers follow the instructions, especially with kits.

My understanding (courtesy of Tim Vandergrift) is that fermenting whites at low temperatures is not so important for kits (compared to fresh grapes). The reason you ferment at low temperatures is to preserve the aromatics. Well, your kit-wine juice has been previously heated to far higher temperatures than 75 F, so this point is moot.
