Would a couple of the pro's critique this recipe and see if have made an obvious error? I have not pitched the yeast yet

White Grape / Peach Wine
I started this on the morning of 01-13-2009
1 Gallon Sam’s Choice White Grape / Peach Juice (not concentrate)
1 Can frozen Welches White Grape/ Peach concentrate
2 lbs granulated sugar (may not use all of it)
2 tsp acid blend
1 tsp pectic enzyme
1 tsp yeast nutrient
Red Star Cuvee Yeast
In a large sterile stainless pot (this one held 3 gallons) marked at 1 ½ gallons
Warm (do not boil) ½ gallon of juice and mix in 1 pound of the sugar, stir until dissolved
Add remaining juice and concentrate, acid, pectic enzyme and yeast nutrient. Stir until dissolved and add water to the 1 ½ gallon mark. Add sugar until sg is 1.085-1.090 and cover with loose lid or clean cloth for 12 - 24 hours at around 72*
On 01-14-2009 I will hydrate and add the yeast and let fermentation start
