I curently have 2 gallons of welches concored and 2 gallons of welches white grape/peach a little over one month old. They have all been degassed, stabilized and had spaklloid added. They have been clearing nicely for almost two weeks. I had planned on sweetening them a bit, but after reading many different recipes I see that some say to sweeten right after adding k-meta and sorbate, then add spaklloid. Did I mess up? Can I still sweeten near the end? Or will it cloud up again? If its too late, no big deal. I will just bottle it dry. My main question is. Should I sweeten right after stabilizing? Then add my fining agent? Thanks

I did have one batch cloud up after sweetening, but others did not. In my cases, it didn't have anything to do with fining as I always sweeten after the wine is clear. I don't know what the trigger is that made it cloud.
