Just curious what approaches others have taken to building up your wine supply. We've been making wine for a little over two years now. We've done 36 batches so far all but two of which have been kits. The kits are all Winexpert except for one Orchard Breezin. We have probably given away more than we have drunk but we still have approximately 430 bottles in our 'cellar', well actually scattered all over the house in any available nook or cranny. We have approximately 300 more bottles that have been bulk aging and are now ready to bottle. Once that is bottled we will be up to about 700 bottles. Unfortunately we do not have a basement. Our daughter in law has volunteered to let us store our wines in her basement but I'm concerned about inventory shrinkage problems if we did that :)

So far we have done 9 Island Mist, 1 Orchard Breezin, 7 Vintner's Reserve, 1 World Vineyard, 9 Select, 5 Speciale (3 gal dessert style port, ice wine, etc), 1 Eclipse and 1 Limited Edition. We have one each of Orchard Breezin, World Vineyard and Eclipse on deck to start. At first we did mostly IM and VR because they are ready fast and because we didn't want to risk ruining an expensive kit but as time has gone on we've gravitated more toward higher end kits. We've reached the point where we are starting to worry about running out of space and about bottles going bad before we get around to drinking them. I think we will continue doing a 4-6 IM kits a year because we enjoy them and because we can give those to friends without being out a lot of cash. We'll probably do 1or 2 Eclipse kit per quarter because they take so long to age and we want to have some good stuff 2 years from now. Then we'll fill in with whatever strikes our fancy.

Just curious about what others have done and how you have coped with long term storage concerns. To paraphrase Samuel L Jackson, "What's in your cellar?" Also, what's your plan or approach to grow and/or maintain your stash?

Other than an assortment of commercial bottles I still have most of the kits I have made in the past year and a half:

Storing the bottles is becoming a challenge. My plan is for some of these kits to become drinkable soon so I can start freeing up some bottles!

In truth the ice wine and Dragon Blood are already there, the rest not so much.

I have just been working out the math of how many bottles one needs to have on hand to meet one's ongoing needs. (I was trying to figure out how many wine racks to build!)

Here are my assumptions: I wish to make a kit, let it age a certain time, and then consume the bottles at a constant rate over a few years (its shelf life). The variables are:

R bottles consumed/yr
A initial aging time (yrs)
S shelf life after aging (yrs)

I claim you need approximately R*(A + S/2) bottles.

For example, I hope to initially age my wines for 1.5 yrs (A=1.5 yr), and then to keep some of them on the shelf for up to 4 yrs (S=4 yr). To support my roughly 4 bottles a week habit (R=208 bottles/yr), therefore, I should plan on having room to store R*(A + S/2) = 208 b/yr*(1.5yr + 4 yr/2) = 208*3.5 = 728 bottles.

In steady state, you will be adding R bottles to this pile each year, and consuming the same number.

If you are interested in where the S/2 comes from, it stems from the fact that your drinkable bottles have been on the shelf, waiting to be drunk, an average of S/2 yrs. (Many have been on the shelf for 0 yrs, fewer of them 1 yr, fewer yet for 2 yrs, etc.) I did not see that at first, and found a (slightly more accurate) result by summing a mathematical series. After finding the result, it's origin was suddenly obvious.
 
I dont buy commercial wines. I'm too cheap. This is what I have been up to over the last little while. Been trying to build a stock of 2 year plus wine. Getting there slowly. Another year should do it.

Bulk aging is a Merlot.

Brewing now is a peach tweaked Riesling.

Amarone and Pinot Grigio kits are sitting on a shelf waiting for my primary bucket to free up.

All but the DB are RJS kit wines.

If you have space issues how do you deal with that?
How do you make sure you drink your wine before it goes bad?

Not a problem. It was cool to see that monster list. What do you have like a 10,000 square foot cellar to hold it all? Are there maps mounted in strategic locations that have "you are here dots" in case you get lost? :) That's just me being jealous.

SHEESH, you're asking something a commercial winery would want to know. My wine cellar is packed and I had to purchase 3 more commercial racks to store bottled wine outside of the cellar. So with about 1400 bottles in the racks, this dictates the fact I can't bottle anymore for a while. This means the other 100 gallons or so stays in carboys for a while. With that said I have about 25 empty carboys I could start at any moment if I get the ambition.

I buy whatever appeals to me, but I'll try to wait until it's on sale.

I use a simple computer spreadsheet to keep track of inventory, tasting notes, etc..

As far as space issues. I have one primary, 14 six gallon carboys, 2 three gallon carboys, and enough racking and boxes for about 400 bottles. I don't plan to expand much beyond these numbers.

I use the spreadsheet to help maintain these numbers, and to make sure I'm drinking the wines at a fairly even rate as they age.
 
I have around 190 bottles in my cellar. My oldest wines are WE LE kits from 2011 (Shiraz/Viogner, Primitivo, and Duoro Tinto).

I've bottled 31 kits in nearly 5 years of winemaking, so that's roughly 960 bottles (I usually get 31 bottles per kit). That does not include three kits I currently have in some stage of aging or fermentation (CC Red Mountain Cab, WE Selection Pinot Grigio, and WE Chocolate Raspberry Port) and three kits that I have ordered or on deck (WE Selection Spanish Rioja, WE LE Triumph, and WE LE Super Tuscan).

I guess that means I consume/gift about 160 bottles per year, and I've averaged making 6-7 kits per year. If I continue at this pace my wife will lock me in my winemaking basement...

My plan is to make 4-5 kits per year. That should allow me to draw down my cellar a bit, because I don't have room for 200 bottles...I have rack space for around 140 bottles. If I make 4 red wine kits a year, they can each spend 3 months in my now neutral Vadai barrel. The fifth kit could be a white or a special kit, like a port. Or maybe I just make the 4 reds.

So for 2015, I have 3 months each reserved for the three red kits I have on deck, after the Red Mountain Cab is due to rotate out of the barrel in March. I'll bottle the Pinot Grigio and Chocolate Raspberry port. Then in the fall, I'll start planning for next year!

Interesting questions! I have three racks assembled and one ready to be put together, so that puts me at the 480 range. Additionally I have 30 bottle and 6 bottle racks in the kitchen for things that are ready to drink. So that's 516 bottles.

There are lots of DIY projects online for how to incorporate wine racks into stuff like shelving, console tables, closets, etc - so you can probably put wine anywhere except kids' rooms. :) There may be ways to find a bit more capacity in your house. We have a 120-bottle wine rack in our den....

I tend to rotate stock such that the stuff on the larger racks is aging, and I bring stuff over to the kitchen racks when it is ready to drink.

I don't have anything computerized in practice, but Paul (@sourgrapes) provided a really elegant excel spreadsheet for cellar maintenance - PM him and I am sure he would share with you.

In terms of what to buy, it is a bit of both. I know I'll need more whites in teh summer and reds the rest of the year, so I can plan for that. I also do batches of Chilean and Californian fresh juice and grapes. Most of the time with the kits I am looking for stuff I can't get fresh and local, as well as limited editions like the Oregon Pinot Noir and the Spanish Petit Verdot. However GSM sounded good, so I picked one up on a whim at the LHBS.

I typically but a little commercial wine here and there but do not cellar it. Most of the time, I am testing the commercial version of a batch I want to make. I also buy some for topping off.

To replace content, the best thing I know to do is have four 6 gallon batches going at all times. This is the maximum capacity of my kitchen, although I have had six going if it's 3 gallon port. In the next year or so, I will make:
-Super Tuscan
-Possibly a merlot
-Currently have Nero D'Avola, Monastel Petit Verdot, Chardonnay brewing, and a Bordeaux blend to bottle; GSM is on deck and I have two 2015 LE's on the way. I will also be making wines from the Chilean spring, Maryland fall, and Californian fall harvests this year.
-I recently made a 6 gallon batch of cider that helped ease the pressure on our wine cellar

Between myself, my hubby, gifts, and our friends, there is not a chance in the world that wine will EVER go bad. Folks joke that our place is where they are headed in case of zombie apocalypse....

I make about one batch of wine a month. When stock appears to be getting low I'll push the schedule a bit and when full slow it down a bit. Wife seems to like me making her same whites over and over again but I'll occasionally introduce her to a new white. I like reds and am slowly working my way through what RJS has to offer in their various series. LHBS has started to also carry WE kit wines so I'll likely to also be checking them out down the road.

I have a laid back approach to this hobby and even though I could I'm simply not interested in spread sheets and different yeast strains and MLF and crushing grapes, and long bulk ages, etc., etc.. As much as my wife and I enjoy the wine I make our greater joy is gifting bottles of wine (20-30%) to family, friends and even folks like the the guys who did the driveway repair, the furnace tuning, etc.

Just curious about what others have done and how you have coped with long term storage concerns. To paraphrase Samuel L Jackson, "What's in your cellar?" Also, what's your plan or approach to grow and/or maintain your stash?

Clearly you're not drinking enough!:dgI've been making a kit a month for years, and finally have 260 in the crawl space. My plan is at some point to drink less. that point has not occurred yet.
 
My cellar

I have close to 1000 bottles now. I started out making Winexpert kits and several were Eclipse. I then started making CCShowcase kits and I really liked them. Now they are owned by the same company as Winexperts so they may go away. I found U. S. Elite about six months ago and have made several of thier kits. I have had great results so far. I have a big storage room in my basement and am installing a sink and counter section and have several shelves that I am converting to wine racks.
