volcano wine?

ok i added some pot. sorbate to my 1 gallon watermelon wine to aid clearing,( its was started on 5/20/11) when i did it erupted like a volcano, it also does this if i add sugar. any ideas?
 
Sounds like either it is not degassed enough or you still have an active ferment. Not trying to be too smart, but there is a bright side to that. At least it was watermelon wine, light colored and not a dark red that stains everything. Don't ask how I know. Arne.
 
The volcano is caused by CO2 in the wine.

BTW, potassium sorbate does not help with clearing.

I often times return my wine to a primary bucket for just a few minutes to add stabilizing agents and to use the drill stir mix for mixing/degassing. This helps to avoid those volacanoes then I splash rack back to a clean carboy.
