I started a batch of Peach wine and it seemed normal during the first fermentation.However when I racked it into a clear gallon jug and placed an airlock on it something strange happened.After about a week I noticed a sponge like layer on the top.I waited a while and little by little it broke up and settled to the bottom of the jug.I then racked it when the Sg reached 9908.It smells normal and still tastes good.Anyone have a clue what happened.Tks Edited by: Ct-Ray
 
Welcome to the Forum Ct-Ray....sorry I can't help you with your question, have never made a peach wine...sure sounds good tho.

Was this from real fruit? I bet once it was stirred up the gas took all
the peach sediment up to the top accompanied by the foaming of the
yeast that sometimes occurs from the extra O2 introduced during racking.

It was from a concentrate.This started as soon as I began the second ferment.It eventually dropped to the bottom.However when I racked it it stopped working.
