trying chokecherry

last fall we canned some chokcherry juice .. now I'm ready to make 3 gal of wine .. I don't want to make a 5 gal batch on the first try with chokcherry . how much space do I need to have from juce top to the top of the bucket ,I have made a few wines but always started with the fruit , not just juice ..
cranberry ,, banana , never did a chokcherry ,, do I need to add any thing ???

I always use a 5 gal primary for a 3 gal batch. Better safe than sorry.

As far as additions go, have you searched for a chokecherry recipe?
