T-O-PTomatoes Onions and Peppers [the easy way]
Maybe this should have been in the Food and Wine Thread...oh well....
Gather your produce...
Wash, core and cut tomatoes in half....run through blender, with the skins...the skins have a lot of goodies in them, and helps thicken your sauces.
Wash, clean and cut peppers and onions in half, run through food processer...
Put it all in large pot and boil till sauce begins to thicken...
When thick enough for your tastes [it won't take long] pour into sterilized jars, top with sterilized tops and rings....process 10 minutes...
This mixture can be used in so many dishes, chili, stew, Italian and Mexican suaces....
Everything made with tomatoes goes good with WINE!!!
And...here is a 'garden oddity'...We love Eggplant and all summer I keep one on the kitchen counter, we call it "the decorative vegetable"...this one had an interesting shape...won't eat this one...
