Well Paklab has let me down. The latest kit I purchased from Amazon came but was missing the chemical packet. I have the yeast but not the bentonite to get it started. Is there anything I can substitue for it? Any suggestion is always appreciated.

The bentonite is not that critical during fermentation. It is more a precautionary addition than anything else. Just make sure you stir the must really well before you pitch the yeast. Also, give it a stir everyday for the first three days of fermentation.

Having said this, if they are going to send you a chem pack, why don't you just wait; you are going to have to make sure you have the stabilizers when fermentation ends. Stabilizers are not optional.
