We are getting great strawberries from our bed. About 25 lbs. yesterday and there are loads more that are not ready to pick. I started a 2 gallon batch of simple strawberry wine last Wednesday and followed the directions to crush the strawberries and pour boiling water over them.



I have been stirring daily as the directions say to do. There is a lot of strawberry pieces (now turning white) that float on top.


Should I skim these peices out or leave them in and try to keep them out when I transfer to the secondary?


Also, my starting gravity was 1.110. Is this too high?
 
That is a little high for strawberry, youllhave to let this age for
awhile to let it smooth out. I would ferment strawberries in a
fermenting bag or nylons because of all the little seeds, this will eliminate all the floaties.
 
Yes, just sanitize the bag befrore you do this using k-meta and rinse it
with water so you dont introduce too much k-meta into your batch at
this point. It is very hard to stop a fermentation in progress but with
the troubles this batch has had I wouldnt want it to stop at this point.
