I sort of messed up stabilizing my 3 gallon batch of White Grape Peach. I racked and added 1/8 tsp of K-meta and 1/2 tsp of Sorbate (even wrote it down). A few days later I realized I should of added 1 1/2 tsp of sorbate. I added 1 more tsp at that time. Is this going to be okay or do you think I'm going to have a problem when I sweeten with re-fermentation?
 
You'll be okay with that. You still only added 1/2 teaspoon/gal as the instructions state. When you back sweeten, allow it to sit a few days with an airlock and check it for any additional fermenting which I don't believe you'll see. BTW, I have a 5.5 gal batch of Niagara-Peach going now. I started it about 1.5 months ago. Good luck with it.
