Martín Berasategui says special shape does away with decanting by capturing sediment at bottom of bottle

i get the point of trapping the sediment etc...but the use of decanting is more for purposes of allowing a wine to breathe and open up.....usually done in a vessel w a large surface area to permit maximum surface are of the wine to the atmosphere

al,

I agree that decanting allows for a wine's airation. Decanting a wine replaces the period of time that one would simply "allow the wine to breathe". Decanting, however, also has the main purpose of a final racking of the wine prior to consumption.
