I am getting ready to start a batch of sp trible berry. I have a few questions. I dont like real sweet wine. I would like it to have a little twang. I see that you need about 10 lbs of sugar and than back sweeten if wanted. I also see that some people add 48oz of lemon juice and some people add 96oz. If I dont want it as sweet should I just add the second bottle of lemon juice and not back sweeten? I understand that you dont know the real flavor until it sets for a while. When I do my final racking and degassing is that when I should taste and adjust?
