I started my S.A. Shiraz kit last Monday 01-15-07. Everything seems to be going good. I checked the S.G. today Saturday 20th and it read 1.024. Today is the fifth day. It calls for 5-7 days, S.G should reach 1.010. I'm in high hopes this happens tomorrow; forSunday afternoon I will be heading out of town on business and will not return until next weekend.


My question is this. Do I rack tomorrow no matter what? Even if the S.G. hasn't reached the right 1.010? Instructions specify, NOTE: if your gravity is not at or below this level, wait (testing the gravity each day) until it is.

Or do I wait until I get home?

I would go ahead and rack it tomorrow. If you have an air lock on the primary, you can leave in there. Either way, you will fine.
