Absolutely! Make sure you hit it with a top up dose of sulfite before hand. My experience is that you can leave the first wine in for 4 weeks. It will be oaky but will fall back down quite a bit in a few months. Make sure you have kits lined up to go for awhile. Also follow the breakin instructions closely .
 
You can use any wine just know that the first wine will extract a lot of oak from a new barel hence the very short break in period so if that wine has already been oaked taste it and make sure you really want more oak! Also make sure your S02 levels are good before and during barrel aging. You dont want to introduce an infection to a barrel as its near impossible to fix it after that!!!!
