I have played with the sulfite calculator from winemaker magazine. I would like to know, however, what is the SO2 level after adding the initial 5 g of k-meta after fermentation in your standard red kit wine?

Winexpert kits have you add an additional 1/4 tsp for long term aging. What is your SO2 level now?

Is there a chart or online calculator I can use to calculate this?

I think you really need a tester to see what the actual levels are. At this point you're just guessing.

There are several kinds available. Titration kits and meter types. I just purchased the vinmetrica one based on reviews from this place.
 
I agree that you would need to test each batch separately but it should be around 45 ppm.
