I have just started this Sherry kit and the taste out of the bag already taste like a Sherry. Is this a certain varietal that gives it this flavor or do they already have this processed in some way to get this flavor. I have tried a bottle of this Cream sherry kit when PlymouthPete and i exchanged some wines it was VERY GOOD! i was really amazed at how good it was and knew that I had to have some of this in my cellar. I actually put this kit in front of the La Bodega kit as I only have 1 3 gallon carboy but will get another soon. I did add a little more oak to it then what came with it.

This is straight from Tim Vandergrift (Tech Supervisor of Winexpert wine kits)
It's Palomino (mostly) along with some Pedro Ximinez, and it's been
carefully pre-oxidised to achieve a sherry-like character. The
commercial process for making sherry is incredibly involved and takes
many years, so we provide a pretty reasonable short cut kit that makes
either an Amontillado style (dry-ish) or an Oloroso style (sweet). Note
that actual dry sherry (Fino) is so dry many people don't care for it,
and it's very difficult to replicate in a kit format.

She is bubbling away already as this kit started fermenting 2 1/2 hours after starting this kit this morning.
