My potatoe wine is now finished but it is a too bitter/sour. What should I do ?

Finished meaning? SG below 1.000?
Is it degassed?
Has it been backsweetened?

SG is below 1.000 and it has been degassed. It is in bulk.

I will try sorbate and sugar.
How much sugar pr. liter ?

to taste. draw yourself off a cup and start adding simple syrup or straight sugar. when it tastes good, figure out how much you put in the cup and extrapolate it for the size of your batch.

Chill for a bit.. age, back sweeten, bottle. I know I'm new, but isn't that procedure?
