Well I'm approaching my 10th day in the scondary, 8th day today. I have followed the Instruction and tested Spgr. Its looking good and in range right now but I have to wait according to the instruction a 2nd day for stability. So I'll be checking again on Wednesday. I did clean and sanitize my equipment before grabbing the sample. During this process I dripped of course on accident a drop or two on my finger. With out waiting to clean the drips up with a towel, I of course with reflect motion licked it off my hand. HeHehah Man it already tasting good and I have about 5 more weeks before I can even begin to worry about placing this Fine Wine into a bottle. If the progression remains constant this will be a very good wine. Thanks George

Sounds like you are right on course oneram. Did George not send you a camera in your kit so you could post pictures for us?

Well, speaking of Pinot Noir. Here's one for your clever guys and
dolls. In June of 2006,I bought a Bolereo Pinot Noir for a friend of mine, my nephew,
since I like to introduce people into home winemaking. We got
everything ready with the wine kit contents being transfered to a
food-grade bucket. His father walked in and asked if he could see me
for a minute. When I came back, my nephew Tom, had dumped all the
contents of every packet into the bucket-yeast to clearing stuff. I was
aghast, but knowing nothing could be done we put the top on it and
left it. The SG of 1.09 at that time. About a week later I racked it off into
the carboy and it has been there ever since tasting very sweet. I tested
it today after going through another clearing, the SG is 99.4. It cleared
just fine and is purple in color and it looks great in the glass
and tastes pretty good except for it being a little too sweet. He likes it
very much, but I told him we must make some adjustments like possibly
pouring some rot gut vodka into it or maybesqueezing some lime into it, or both. The Atlanta Wine Shop, Wine Craft, advised me to send it down
the drain, but if he's happy with it. so what. Have you all got any
suggestions as to how we might treat it.?

My brother in law did the samething when he 1st started. He called the
company and got more of the clarifier, sorbate and k-meta. I have a
bottle of it ready to drink. It is a Chianti 7.5 kit with 6
months on it.
