Orange Chocolate Port

I want to make a batch of this from scratch, I've only done kits until now. I want to use Wade's Strawberry Chocolate port Recepie but exchange the strawberries for oranges. Couple of questions, how much oranges do I need and how do I prepare them? I've also read that because the oranges are very acidic, you should add something like pineapple to neutralize it. I have acces to a "local" everclear product ( jet fuel ) I can use, but not sure how much I need.
