I am making the renaissance Amarone and the kit says to add the oak at secondary fermentation. Then it says to leave the oak in for a week, stirring daily. Am I supposed to take the oak out before the fermentation is done? If so, how do i do this?
 
Leave the wine in the secondary with the oak until the fermentation is complete (Day 16-20 depending on temperature) and rack off the oak and lees as it will all be at the bottom. You will also want to stop stirring after a week to allow everything to settle.
