Not sure what to do with my apple wine

Best thing to do with apple wine is find someone with a brandy still and make brandy!
 
I just opened up a bottle of apple that is now officially 1 year old. It was harsh, dark and had bite!

Might have to sweeten, but u only have 2 bottles left.

So disappointing after a years wait!

Apple vinegar might be better than Toying with 2 bottles to make them enjoyable.

My experience with ripe apples is brief, a batch bottled recently. It fermented down to a SG I have never seen reached before which put it at 14.5% ABV. So I had to sweeten decently to make it palatable.

In general, my opinion is that the best apple wines are from slightly green apples with higher acidity levels. The best batch of wine I ever made was from green crabapples, had to add a lot of sugar but the acidity was right and after >1yr everything came together for an amazing wine.
