Hello. Just found this forum. seems nicely laid out. I am into fruit wines. Presently making Hawthorn (locally called Mayhaw) and pear. Considering Pindo since I have a free sorce. Can anyone describe it ?Most around here make Pindo jelly but I have heard it called the Wine Palm soooo

Can't really help with fruit wines but I am sure some one will chime in with a suggestion or two.

I'm not familiar with Pindo - I noticed recently that the row of palms (I don't know what species/variety) where my wife works had dropped many pounds of juicy fruit. I may try to harvest them next year to make wine.
 
I made 5 gal this summer and didn't care for it. Leaves an alum after - taste like not-ripe persimmon.
