My first attempt at all three: new 32 gal barrel, fresh cab sav juice and 72 lbs of grapes.
I rec'd my juice and grapes in two separate orders (chilean cab sav). The juice has finished primary fermentation and ML, and have been moved from the primary into a set of demijohns. I rec'd my grapes which are almost done fermentation in the primary.
Now I'm wondering what and how to do things next. After pressing the grapes, I'm trying to decide if I should first mix both the first batch of juice with the pressed juice in my large primary, or do so in my new barrel. And, whether I do either, how long to leave in the barrel? I'm thinking I should leave it in the barrel about 4-6 weeks, then back into the demijohns and a carboy to bulk age a bit.
Anyway, I would sure appreciate some guidance, and thank you in advance.
